Cool weather means I move back to the stovetop. Tonight was some eye of round from Aldi with mushroom sauce. Mashed taters and corn.
Walking through Aldi today to get some Ciabatta for the lovely wife, who likes toasted Ciabatta for breakfast, I spied a package of eye of round steak. $5.65 for 1.2 pounds seems like a decent price. I remember my Momma making round steak as a kid, the kind with a can of soup poured over top.
Sorry, Momma, but I’ve gone just beyond the can of soup stage.
Sautéed some garlic and onion in a bit of olive oil and butter and removed from pan.
Added tenderized round steaks, coated with a flour, salt and pepper mixture. A little more olive oil and butter was also needed. Browned the steaks on both sides and removed.
Added 8 ounces of mushrooms and a bit more butter to the pan. Sautéed until the ‘shrooms were tender.
Deglazed the pan with beef broth and a splash of Sherry and threw everything back in. Added maybe a quarter cup of milk. Let simmer on low for 45 min to 1 hour, partially covered until the steaks were tender.
Chopped flat leaf parsley for garnish.
Served with mashed potatoes (cream, butter, sour cream, chives, S&P) and some Best Choice frozen Super Sweet White Corn (butter, S&P). If you donn’t have an AWG grocery nearby that sells Best Choice brand, sorry. If you do, give this corn a try!
