not getting my wings crispy enough..could be only doing them for 40 mins?  two baskets fill in middle of kettle --wings all around perimeter ...450 degrees for 60mins? fiip or no flip half way?

Keep chicken cold in fridge after sprinkling with coshir salt and any other seasoning you want for about an hour. Get grill hot. Real hour without any water pan.
Cook indirect. Use a inside temp thermometer like a thermoworks smoke while cooking. Flip half way if you want.
You can direct cook if needed for a short time. Watch close because they will burn.
If you use sugar in your seasoning, it will burn easy.

Or cook low and slow indirect and then direct hot and fast.

I usually leave mine on a rack, in the fridge overnight. 

I am also a firm believer in the Vortex.  (I like my SnS, too, Joe, I just feel that the Vortex does a better job on wings.)

If you go that route, please support the creator of the Vortex and stay away from the scabs that stole his idea and are putting out cheaper versions, the Whirlpool, the Cyclone, etc.  The real one is not that much more money . . .

LOVE my Whirlpool, but she squeals a little on the spin cycle.

Yes the vortex does an amazing job.
The principal is with the small end up, heat rises drawing in air from the bottom. The hotter it gets the faster the air is brought in the hotter the fire. Chimney effect.
So if you are closing down your vents, then a vortex is not a benefit. Leave vents fully open for max heat. If you don't want max heat then use a Slow n Sear or another method. Slow and Sear is also use for a lot of heat. You can get real hot with a full lit chimney of charcoal added to it.
The vortex is an awesome gadget. It has is purpose.

Still, the most valuable gadget for a Weber kettle is the slow and sear.

Well in the meantime will try my baskets full of lump-- all vents open--wings around the perimeter full vents open for 50 mins.....try to get crispy wings sort of like deep fryer

The baskets are nice. The thing is with all the holes in the sides, the heat reaches directly to your meat. The vortex makes the heat go straight up and then bend around in all directions to the top of the food. With baskets you have to watch and move your meat around more often.

Baskets work perfectly fine without moving the wings around. I just did a side by side comparison in another thread

Here you go. There is absolutely no difference in time temp or overall quality of the wings. I did not move the wings at all on either vortex or baskets.

The vortex does allow for a little more indirect grill space.

I’m not criticizing the vortex. I’m guessing I could fit at least 10 more wings around it.

LOL very good. I never tried to compare the two.
I do know that when I use a vortex, I can nearly burn the skin. Haven't actually tried the baskets in center as for chicken.
