Bought the Weber skewers a few years ago on clearance from Home Depot and never used them cause I still had wooden ones to use. I picked up a small package of country ribs (aka sliced pork shoulder) and cubed it up. Made a Marinaded with some McCormicks sweet and smokey rub, oil, vinegar, and water.

Quickly stuffed a few jalapeƱos with olives and jalapeƱo string cheese.

On the workhorse, the OTG with a fully lit mini chimney in my baskets and a little apple wood.

Really messed up here. Temp wasn't going over 250, rookie mistake, bottom vent completely closed. Ugh. Opened it up and saved the day.

Plated with some really quick microwaved frozen green giant rice pilaf.

Man that was a good meal.

Haven't done any country style ribs yet,but have been intending to. I've done them for yrs on my gasser just not on charcoal yet. After seeing your pics I don't think I can wait much longer. Nice cook!👍
