My First Try at St. Louis Ribs

My mom and mother-in-law are traveling out of the country for two weeks, so my wife and I thought we'd treat our dads and some other family to a rib dinner yesterday. I picked up two St. Louis style racks (buy one, get one free at the Jewel) and gave them a shot. 


Seasoned them with the Chicago G2G recipe I found on here earlier this summer:


Smoked them for two-and-a-half hours:


Temps stalled at just under 160 degrees so I wrapped them in aluminum foil, pouring a little beer (PBR) over them before covering:


Put some homemade jalapeno honey barbecue sauce on them and, after four and a half total hours, the final product:




I'm far from a rib expert--this is my first summer seriously cooking them (I call it my "freshman year")--but they turned out well. Probably could have stayed on for another half-hour or so, but very delicious.

Great smoke ring and they look delicious. That sauce sounds really good. Quaker steak has jalapeƱo honey wings that are great.
