Beans and tater salad as sides are always a hit. And to keep your pulled pork/beef from drying out, keep the chafing dishes covered. Plus, I add a bit of water or apple juice now and then to the pan. Not a lot, just enough to keep it moist. Stir often. The pan cover is key.
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.
