Tried out the hanging rack today by doing some ribs in the 18. It was a last minute decision so I ran out this morning and picked up 3 slabs of baby backs, and a 3/16" steel rod from home depot. The weber rack hooks didn't seem like they'd work well for the ribs and I didn't have enough time to order the PBC hooks so I had to make my own. Per @LightningBoldtz advice, light coat of mustard, rub, and hung to smoke for 3 hours at 300, no water pan, right over the coals. Turned out great!
