Baked tomatoes with eggs

A recipe the lovely wife found. Not my cup o' tea, but she liked it.

Hollow out tomatoes, fill with spinach (cut into ribbons), cheese, a little sea salt. I added a little cilantro.

Crack an egg into a small bowl, season with sea salt. Gently pour into tomato. Grind a little black pepper over the works.

Bake at 350 deg (plus or minus) for 35- 40 minutes or until egg whites are set.









The pastry is an artichoke/cheese stollen from Aldo that baked along with the tomatoes.

Interesting. But I'm not a fan of baked tomatoes. I could eat fresh tomatoes by the pound though,
