Roti garlic beef

Weber steak and chop seasoning and olive oil. I combined olive oil butter and garlic in a sauce pan to brush on as it's cooking. It's in progress.

Thanks fellas. I used sirloin. It was on sale yesterday and was the cut of meat I was wanting for this cook. I bought 3.3 pounds of sirloin and cut into 2" chunks. That's the max I could fit on the rotisserie with chunks that size. It took at least 1/2 hour - an hour to cook. Can't remember exactly. I used 3/4" of a chimney and started out banked but ended up spreading it under it. The cool part is the meat was getting close to done but the side dishes being cooked inside still had awhile to go. I just left the lid off and it still cooked but at a much slower rate.

I was thinking about doing shorter roti cooks with the lid off the entire time.  Think big fire with pieces of split wood kinda Santa Maria style spit roasting.  Anyone ever tried this?

I started off covered then moved coals more to the middle and cooked uncovered the second half. It worked good but for a hot fast short roti cook I will use baskets next time to get the heat closer to the meat. Also this would give the ability to move the baskets while cooking if need be. I will be doing more short roti cooks in the near future fosho
