Today I got some beef cubes and made kabobs. Found a marinade recipe online but since I didn't have all the ingredients I did mods and it was very tasty.  They came out good other than they could have been a bit rarer for our taste. Next time I think I might reverse sear them and they should be just right.

No pic, but tomorrow I will do my first roto chicken and will definitely document that. Originally I was planning to do it on the weekend, but the weather forecast is for a nasty nor-easter in our area.

Indirect if adding other stuff, like onions and tomatoes. Just meat... direct, 45 seconds or so per side. All four sides.

All meat... That shit goes fast.

Also mind your knife cuts, if all meat. That shit needs to be even.

Sounds like they are already cut into cubes. Spacing on skewers makes a difference on cook time.
