First attempt a Beef Wellington

Hey ya'll. I had bought whole tenderloin at Costco, broke it down and froze it. Tonight I gave Gordon Ramsey's recipe a go with the chateaubriand.
Turned out very good and also learned a little along the way for next time.
I think I used a little too many mushrooms and still had some moisture in them because the bottom was a little soggy when cutting and serving.
No worries though, flavor was on point and it was a fun cook.

Travis, great cookup. The moist bottom is pretty common. It's hard to keep all the puff pastry crisp all the way to the plate. Your meat looks perfect.

I have a couple tips. Yeah, you gotta get your duxelles completely dry. But you can rest the cooked Wellington upside down on a rack to avoid that sometimes. It lets the juices run the other way during the rest. Yours looks like an upside down rest would have worked.

Travis, Wow! Really nice job. I sometimes do a mini Wellington, but have never tried it on the Weber. Inspiration!
