Love Coal Holders

It is amazing how much more organized my cooks have become since I bought coal holders. I use them in the center for direct vortex like heat. Or at each side in a 2-zone indirect setup. Today I am doing single zone indirect for chicken and ribs. It is working well.  And I am using a tip I learned in here to make a foil shield to deflect and protect the food closer to the coal

So far so good. Should be done before the rain hits.

Well, I got the food cooked and off the grill in the nick of time. The thunder storm hit quickly and I actually stepped inside just as a torrential downpour started. Everything came out juicy and tasty. No plated pic because as soon it was on the table my guys dug right in.  I did too LOL.
