Burger Month Entry - Marty's Breakfast Burger

WARNING! This burger breaks most of the rules! I knew I wanted to do something different. Everyone loves a good breakfast sandwich, so why not do a breakfast burger? I've been messing around with Paleo cooking, so a bun was out, as were potatoes. So how to satisfy that itch? How about a Chorizo burger on Spaghetti Squash waffles with rutabaga hashbrowns? Buckle up, here we go!

Squash is halved and baked at 400 for 45 mins. Let cool, then scraped out and wrung out in a clean towel.



The squash is mixed with two eggs and salt in a bowl. Makes a thick batter. Half and half ground beef and chorizo in a half-pound patty. Rutabaga gets shredded in a Cuisinart, mixed with one egg, garlic and onion powder. A little siracha-mayo to bring it together at the end.



Hashbrowns are on, grill is ready in the background. Waffle iron is ready, so the batter goes in. Burger hits the grate. Add some bacon to the pan for good measure.




Getting close - some cheese on the burger, avocado sliced.



And now the payoff!





Fantastic! Easily the best breakfast burger I've ever had. Who wants the second half?

Wow, that looks interesting to use the squash for a bun. I have seen recipes using cauliflower to make buns and even pizza crust

Wow this looks fantastic! I love spaghetti squash but never tried to make it into a bun per say. What a work of art! I have tried to make a hash brown type consistency with spaghetti squash before but your rutabaga version looks way better, I have to try this!
