One hour. Cut the back yard and gave the ribs a spritz of apple.

Hour 45 in and both are probe tender and around 204 internal. I'm calling them done. I'll hit with a little BBQ. These are before sauce.

They were both great. On texture and juiciness, the 26 won. On outside "bark" flavor, the roti won. I think the scales were tipped in favor of the 26 because that rack was perfect and consistent in thickness. The roti rack had a thick area and kind of narrowed to one end. Also, I think I was cooking hotter on the roti the first half hour. That's a big difference when total cook is only 1:45. I think I should have pulled the roti ribs 15 minutes sooner but they were still great.  Like I said, that rack I put on the 26 was beautiful going in and beautiful coming out. I need to do another show down with 2 beautiful racks. Also I would put the rack in the spit a little differently next time and I would control the temp a little better. The 26 just hummed along at a perfect 400 the entire time.

That side by side of the individual ribs isn't a great comparison. There were thicker ribs from the roti rack that looked much better

Nice comparison. Next time, get the temp closer to 26" on your 22" roti to be more of a fair comparison.  I like to see if you still feel the same about the texture and juiciness.   Both ribs look great!

Yes I agree. I would say the 22 was cooking 50 degrees hotter the majority of the time. Poor form on my part for a comparison.

I can't wait to do roti ribs again. I think they would have been perfect at one hour and 15 minutes. They looked incredible at the one hour mark. Quite possibly the fastest method there is.
