For wings I typically use a Vortex on my 26er and, like bg, run it pretty much full open.

I did smoke them, once, on my WSM (at a BBQ Contest) and was not pleased with the results.

Wide open with the Vortex if you have one... if not, use the baskets.
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...

That is correct. Lid on vents open. After all, covered barbecue is the very essence of the weber grill. That's the magic part.  [emoji41][emoji12]
