Gorgonzola sauce steak and smoked spaghetti

On another kettle site , we had a pasta cook challenge. While looking for ideas , I came across this recipe and made it last night. Couldn't believe how awesome it turned out. Steaks were salted and cooked till 115 and seared in a 13 1/2 lodge , then covered in sauce. My pasta dish for the challenge ,  was hickory smoked meatballs , home made marinara sauce , angel hair pasta , and covered with mozzarella and parmesan cheese.

 Smoked meatballs and spaghetti

Meatballs
1 lb of ground beef
1 cup of Italian bread crumbs
Medium white onion minced
1 tsp of salt
1/4 tsp pepper
2 cloves minced garlic
1/4 cup parsley
1/4cup parmesan
1 egg lightly beaten

Sauce
2 tbsp olive oil
2 onions finely chopped
6 cloves minced garlic
28 oz crushed tomatoes
15 oz tomato sauce
1 1/2 tsp salt
2 tbsp balsamic vinegar
2 tbsp sugar
1 tbsp garlic powder
1 tbsp dried basil
1 tbsp dried tarragon
1 tsp red pepper flakes

Smoke meatballs till 160 degrees. Heat oil and onions till their soft. Add garlic for minute and then the rest of sauce ingredients. Simmer covered for 2 hours low heat. Boil 16 oz of angel hair pasta . Oil 12 inch cast iron pan and add noodles. Cover noodles with sauce and meat balls. Cover with mozzarella cheese and parmesan cheese. Put on grill for 20-25 minutes at 325-350 degrees.

. Man that looks incredible. How were those meatballs?  I can only imagine the smokey flavor they must have picked up. Haven't tried that but I've put it in the list. Thanks for sharing.

The smoked meatball flavor made the dish pop! Used one chuck of pecan and couple handfuls of hickory chips. My girl who loves Italian food  was hesitant when I told her what I was doing. She didn't think BBQ and Italian would work together. She ended up loving it.

Incredible man. I thought that meatball pic was perfect, but then you break out the Gorgonzola steak recipe.  Crazy good!

Yep it all looks good! I bet you got one hell of a sear and crust on those steaks. Would have loved to see the pic before the sauce was added. Nice work.

Tried to upload the video of the steaks searing, but won't let it upload. Put my skillet in the oven with the potatoes at 350 for 30 minutes and then transferred to grill over a vortex with a full chimney lit. It was sizzling like I was frying chicken .

I'll definitely try that next time but with baskets as I don't have a vortex. You get the heat but keep the steaks from catching fire. I like it.

I used some peanut oil also. Want a oil with a high smoke point.

Oh yeah!!!!  Sounds like a cool kettle group!  LOL.   I want to take your gorgonzola idea and try a stuffed steak!!!!!  Great cooks Brian!!!!

SMOKE FREAK

Well hell I was looking for "smoked spaghetti"  Made some grilled spaghetti once and was anxiously awaiting smoked...
But it's hard to be disappointed wit cooking like that...It ALL was over the top! Great job...
