Ribeye, Filet.

I never buy Filet. I wait for whole beef tenderloins to go on sale and buy one. Then I cut nice thick slices out of it and cook then like steaks. Last time I got them (For Valentine's Day) they were $6.99/lb.And very good!

Same here Hank. I'll wait to find one at GFS for $8.99 or $8.49 per pound and cut my own steaks. I'm not that great at getting the silver skin with ease yet.

Ten years ago it would have been a new york strip or a ribeye But then I started buying large cuts of beef. When buying primal cuts you really start to get original about what a steak can be and where it comes from.
I can get about 4 steaks from a sirloin tip that are just great. Hanger steak. Flank steak are always a great option. And cutting a few fillets out of a loin really excite me now.
Still my favorite is
actually a roast, try tip done in a true Santa Maria style has to be the best.
If we were meant to grill with gas then the garden of Eden would have had a pipeline

My current fav right now is the Boneless Short Ribs, then the Hanger steak followed by the Ribeye any day of the week. Flat Iron's and Ribeye Caps are right up there.
