I recently met up with
@Troy
and
@Jason
down in SoCal and they spoiled me with some amazing homemade Pizza's... Well this was the kick in the butt I needed to try out the sweet pizza rig I was so generously gifted by
@iCARRY
during this years Secret Santa Exchange. Thanks again Ryan!
This is also my first time making the dough from scratch so a lot of new variables this time around
Started out with the dough mixture. The recipe I used called for 5 cups of "00" finely ground flour, and 1 cup of Semolina Flour.
After a thorough mixing the dough was split up into 4 equal parts and set aside to rise.

Here is the assembled PizzaQue oven kit fit onto an old brownie that's been selected as a dedicated pizza machine:
After seeing Troy's kettle pizza kit with the steel topper I decided to experiment a bit to try to keep some extra heat up in the lid. I turned a 22.5" cooking grate upside down...
... and then added this solid aluminum griddle to reflect the heat.
The fitment seemed real good and it came up to temp quickly.
Here are all the goodies along with a wooden peel... I would HIGHLY recommend a wooden peel to build the pizza's on (Along with a dusting of Semolina <- also VERY important!) as well as a metal peel to use to move and maneuver the pizza once on the stone.
The rest is fairly self explanatory so I will let the pictures do the talking...
In the end the pies came out great! I did have to raise up the back side of the griddle rig slightly as the first pie touched and melted a bit while turning. Now that I know the setup works I am going to install a few proper resting points for the upside-down grate and I think it'll be a great little setup. I may also try sticking a few lit briquettes up on top of the griddle as well... Now to experiment with some different styles of pies!

Oh man those look good. I haven't had a chance to use mine yet. Glad it worked out for you. So you think it is a decent kit that just needs a little tweaking? Also, how was the smoke wood?

Damn dude, I'd say you crushed it!
I was lucky enough to grab one of those clearance kettle pizzas, now I REALLY can't wait to try it out!
