Starting to really use the crap out of this rotisserie @Travis.  So glad you pushed me to use it.  I even have the trussing down now.

I use Dean and Deluca poultry rub under the skin and Trader Joe's lemon pepper on the outside of the skin. I use the poultry rub mixed with butter under the skin of my turkeys also.

@Cellar2ful I've been having a lot of success with using herb butter under the skin too. Roasted garlic, thyme, rosemary, sage, s&p, with some chicken seasoning mixed in. Same chicken seasoning for the skin too. Been working real good.
Your bird looks incredible. Nice tie up.

This is the best YouTube tutorial I found about trussing a turkey (chicken).  I did not realize the placement of the forks, up or down, make a difference on overcooking the breast meat.
