Not a big spread, but a quick meal during the work week

Firing up the 26 in kettle


Couple of pics of flank steak and baked sweet potatoes



Had this with some leftover pasta from last night. Simple but good. The flank steak comes from a local butcher (they marinate these). Their hamburger meat is awesome as well - they ask you how much and they go into the walk-in and grind it up fresh. Much better than the big name stores.

I put a little olive oil and wrap them up in foil. I usually have them directly over the coals for around 20 minutes or so. I use a glove and turn them a few times and put the lid back on while doing this. Once they just begun to soften, I put them indirect for another 15-20 minutes. They always come out tasty with a few areas that get caramelized a bit.

I forgot to mention that I used dogwood when searing the meat. It is very similar to oak.
