Suggestions Wanted

Last night my Vol. Fire Dept. Held its annual sportsman's dinner. I brought home a bunch of chicken and beef leftovers.

I have 5 or 6 cooked leg quarters and several leg quarters that I have shredded already. I also hav  a cooked whole flank steak.

Any suggestions what I can do with any of this on the grill tonight? It is a pretty Sunday afternoon and I really want to cook something on the grill.

We are fans of enchiladas. Wrap up the meat with some beans and rice and peppers. Red sauce and cheese on top. Ours usually go in the oven but it would be fun to try them on the grill with some smoke.

Here are some red and yellow onions cooking. Not a fan of peppers do they were left out.
