Brisket on the Aristocrat

Started this morning at 5am, just wrapped at noon. I'll make sure to post finished pics this evening. Using the snake method on the Aristocrat. Ran a little hot this morning, covered up one of the daisy wheel vents with a magnet this morning before I left for church (my son had to sing at the 8am service...pretty sure there's a commandment against that). Came back home at 9:30, and she was sitting pretty at 250, been around there ever since. FYI, if you are ever looking for butcher's paper for wrapping a brisket, just go to your grocery store and ask the butcher's counter for a big old sheet. They'll give it to you for free.
