Wanting 325-350 degrees in 3 wheeler ?

Looking to do my first cook in a 3 wheeler. Planning 4lb pork loin an pan of red taters & onions. Thinking of a small weber chimney of stubbs lit dumped on to another small chimney of unlit.
Does this sound like good starting point

I'd add more unlit so the temperature doesn't start to fall toward the end of the cook. Otherwise, your plan is alright.

If it ends up below temp add some lit. If over remove some lit. You can do it.

This fairly fat chain got to just over 300f, so maybe plump it up a bit & have a great cook!!!!

I'd snake it like Buckie's pic. I did a butt like this...
Funny happy accident occurred. I put my temp probe toward the end of the snake. When the snake burned around to that probe, my temp alarm went off because it was over my limit setting! So I added more to the snake, moved the probe, and kept on going until done.
