I found a turkey in the freezer.

Not low and slow, for a change - the last of a bag of lump charcoal let me cook the bird at 350. The wings got eaten before I could take the photo, which I took as a compliment.

Looks great. What did you season it with?
I rubbed the skin with vegetable oil, and seasoned with salt and pepper, and a small amount of the rub that I use for wings (a mixture of fajita seasoning, cayenne, chili powder, and paprika).

I cooked it on my WSM, bottom grate, no water in the pan. Temp was set for 350, controlled by a Stoker, but didn't hit 350 until about an hour into the cook. Cooked about 2 hours and 20 minutes on the vertical stand.

They tend to hide behind the pork butts, especially this close to Thanksgiving.
