Even though I am new here, I do enjoy cooking food over a live fire. Her are some recent cooks including some dishes using CI skillets.

Two pork butts cooked on the WSM




Corn arepas in a CI skillet



Cooking some potatoes (sweet and yellow) and warming up some ribs from the freezer (this was cooked last November when we had no power due to Sandy)



Chicken legs and jalapeƱo cornbread poppers

what's the deal with the cornbread poppers,  unless it's a secret recipe ?

Favorite shot is the roto chickens....along the Great Wall of China...... 8)

Are those little brown things way in the background yaks, at a distance ?

Good looking food, I had to look up those arepas , sounds pretty close to the hot water cornbread we make around here.

The cornbread poppers are simply jalapeƱos filled with some cornbread mix and cheese. Here is a link that Gives you the idea. I made my own cornbread mix and spiced it up a bit (chipotle chili powder). I also mixed in Some sour cream to help keep things moist. I cook cornbread quite often in a CI skillet, but I try to keep that on the mild side (have a 6 year old that also loves cornbread). I just made a little more cornbread mix and stuffed some peppers. They were tasty.
