It's called a Cookina Grilling Sheet and is my new favorite accessory

Silicone sheet?

Not silicone - its a woven Kevlar or carbon of some kind that allows all heat through but no liquids etc will fall down into the grill. It cant go directly over the charcoal but off to the side works fine. It's good up to 550ish
