Yeah so I attempted to smoke on the big boy I picked up. Let's just say the minion method will be on my next time run. I took some advice I should not have (stupid manuals) that stated to light the coals until all are 80% ashes over. Every couple of hours I was burning more and more charcoal. After 8 hours and the pork shoulder still not done, I sent it to the oven for a 2 hour time out in 225*. This big boy definitely has a learning curve to it, but I'll make sure to use the minion and maybe cut a door in the side of it so I can add more briquettes. I was using kingsford competition briquettes. I need to find some Stubbs...fast! Any one have any suggetions for charcoal for smoking? Thanks.
