Really excited to try these as I had never made kangaroo before.



Getting ready to fire up the Green Gen 2 Performer



Chopped some bacon up and added to the meat to add some fat as everything I read told me kangaroo was extremely lean.



Split the pound into thirds



Performer warming up



Added some squeeze butter for a little more fat and grill indirect for about 20 minutes or so



Cheese added and served on a pretzel bun with Amish Potato salad and pickles





Overall this was a good burger but had a definite game taste to it. I have lots of Bison and Venson and this was much more so then them. I would do it again, but probably add even more fat to it as it was extremely lean.

Looks good! Nice call with the added flavor (butter). I bet that is a lean meat. I didn't know we had kangaroo meat!

Pretzel buns are my favorite burger bun. Never had kangaroo before. Grate lookin burger.
