Italian beef sandwiches with a side of chuckeye

Threw this together Saturday evening. A grilled version of a Italian beef sandwich. I thinly sliced up a chuckeye roast added some seasoning and seared it before tossing it in a skillet filled with sautéed onions, red and yellow peppers and some mushrooms. I let it all simmer while I seared up a second chuckeye roast coated in salt and fresh ground pepper. As hungry as I was and with the help of a few Dark Horses I forgot to take pictures of everything plated up but it looked great and tasted better.
