Nothing too exciting compared to the other amazing St. Paddy's Day entries here but here's mine nonetheless.
3 lb Skylark Corned Beef brisket. (Skylark is a local brand ) rubbed with the herb and peppercorn packet.
On duty tonight, the 2005 18.5 dark green OTG. Small size chimney loaded with applewood briquettes.
After preheating and adding some soaked fruitwood blend chips, the brisket went on. Fat cap side up.
Smoking away...
This is an hour and a half in. Internal at 144-149 degrees. Time to pull off and rest.
While the brisket was resting, I did the Brussels sprouts.
All carved and then plated with sour cream and chives mashed potatoes. Time to consume mass quantities.
If your wondering big why no cabbage... Two reasons. My wife doesn't like cabbage. (Makes me sad because I love cabbage) and the second reason is my mother will still be doing corned beef and cabbage at her house soon so I will get my fix.
