Plan on smoking some beef short ribs on Saturday. Just trying to get a general idea how long they will be on the grill. Probably gonna be around 250°. Using Eat rub and oak chunks.
Still need a 22" yellow

Forever!   LOL.  Just kidding, they will be on until they are done!  Beef back ribs do take forever, but I'd imagine short ribs take a lot less time.  I've never made them so hopefully someone else chimes in with some useful info for you!

I did this a while ago. Smoke, then wrap with beef broth and butter to finish. Lots of good ideas though. Not as much info on how long to cook.

Get bark and foil till tender. Thickness varies so it's hard to say for how long.

I did some beef chuck ribs not too long ago. They took about 6 hours. But like everyone is saying cook them under they are tender.

I cooked some for 6 hours and let them rest for 45 minutes in a cooler. Came out really tender.

I did some a month or so ago. Nothin' but SPOG on it, hickory chunks for flavor. Unwrapped the whole time, 275 +/-, took 5 1/2 hours to probe tender. Best hunk of beef I've ever had. My wife couldn't believe I waited so long to do them.

I always do mine 3-2-1,  brush them with olive oil, kosher salt, blk pepper, garlic and onion powder
