Been wanting to try making some pastrami and beef ribs so finally went for it.  I used playing with fires pastrami recipe, so I got a corned brisket let it soak in water for a day then rubbed and let sit another day.  Smoked on the kettle with cherry at 250 till probe tender.  Turned out super tender and juicy but the texture was super off.  I think it was from the corning.  Next time ill try to brine myself.  The beef ribs were awesome! Can't believe I have waited so long to try them.

The meat looks very tasty. Can you tell us more about how the meat can be super tender and juicy but the texture was super off?
