Kosher salt, course fresh ground pepper, then shook in a ziplock bag with flour.

Put them on the grill (vortex got it up to 600 degrees with just one chimney of Kingsford) and turned once.

Just do it. Of course being game day, HEB was sold out of the big bag...so I had to buy two packs @ $2.17/lb.

The 22" grill just held 32 around the outer ring.

I just did vortex wings last weekend for the first time and was amazed at how well they turned out. It is a really good accessory.

I today ya!!!!!!  Haha.  Vortex wings are amazing.  I'm glad you had good results on your first cook.  Since you have the gourmet grate, I'd suggest taking the center grate out if you aren't cooking on it.  The vortex gets really hot and while I don't think it will damage the grate, I'd take it out anyway.  Just got a gourmet grate and will definitely take my center grate out.  Will make it easier to add wood and coals if you are doing multiple batches.

I had debated that, but wanted to put the wood chunk above the flame. The chunk of wood put a considerable amount of smoke into the wings, so I might go with a smaller piece directly on the coals next time...the center grate will be gone.
