2nd late night cook in a row: rotisserie got the call

Awkward holiday schedules lead to late night cooks.

Cajun rotisserie chicken got the call. 7.5lb chicken cooked at 350-400 for an hour and 15 mins with coals off to the side. Once IT reached 150, pulled coals to the middle under bird and let'r rip until 162/169.

Pulled in to rest, while I made mac and cheese and creamed spinach.

Looks great. Just got one for Christmas for my kettle. All set up and sitting in the garage. Only 20 degrees here. Have one on the gas grill and love it. Waiting for the fun.

Where do you find a 7.5 lb chicken? The birds I see at my grocery are maybe 6 lbs max!

HEB (local grocery store)...even the cashier was surprised at the weight.
