Did ham hocks two different times in the last few weeks and have to say it is to me the best tasting ham I have ever had. Crispy outside with nice sweet and juicy ham on the inside. I did a simple salt water brine and injected the hocks about 12 hours before I start grilling them. I used water, salt and then added some garlic power, pepper some apple juice. I let them sit over night.
I put them on the grill for 5 hours at 250 to 275 degrees. I normally baste them every 30 minutes and flip them over at that time. If you want something a little different to eat and like ham (especially ham that is around a bone which is much sweeter) then you should make them sometime. Out of all the things I have grilled my parents like these the best. I'm lucky to have a place that stocks nice big ham hocks and not those little wimpy ones Lol. If your around the Harrisburg Pa area I buy them from Heagy's Meats at Saturdays Market. They are only open on Saturdays. Its a flea market indoor and outdoor year round.
