Beef Ribs (1st Cook Post)

After a weekend full of turkey and turkey leftovers, I decided it was time to change it up on Sunday.  Went to my local butcher and they had a nice 4lb rack of beef spare ribs. I had never cooked them before so figured it would be a good way to distract myself from Christmas decorating during the day.

First, I trimmed of the excess fat and made up a quick rub.  The ribs went on the grill at 11am.  My rub was 1 tbsp kosher salt, 1 tbsp course black pepper, 1 tsp each of garlic powder, chili powder and paprika.  I used the snake method with 2 layers of 2 coals topped with chunks of pecan.


After about 3 hours I started mopping with apple juice (couldn't find a working spray bottle so I just used a grill brush):


Fresh off the grill after about 6 hours:


Wrapped them in parchment paper and let them rest in a cooler for 45 minutes.  After resting I sliced them and got this:


And finally, the plated pic with roasted red potatoes and creamed spinach:


I was really happy with how them came out and will definitely cook short ribs again. The best part of the cook was when my two year old daughter, who is a picky eater, kept requesting "more meat." Thanks for looking.

@jfbincypress I think that they were $7.99/lb (my butcher tends to be pricey).  I've seen some posts on here quoting less that $4/lb at wholesale places.

Hey @jfbincypress, I got mine at Restaurant Depot for less than $4.  I've never even seen them in any local supermarket.
