Gouda/Bacon Stuffed Chops with Grilled Romaine lettuce

  Butterflied 6 med cut boneless sirloin chops , rendered down some bacon and drained. Sprinkled the inside of the chops with Weber Chicago steak seasoning and then prepared mustard. Shredded some Gouda and mixed with the bacon pieces.






I then tied up the chops with butchers twine and repeated the rub and mustard on the outside as well .

Standing them on end so the cheese wouldn't escape , I smoked the chops at about 275 with Apple chunk wood until I reached and internal temp of 145 , pulled and rested.
Sorry for the dark grill shots once again .

I took 3 tablespoons of the fat rendered from the bacon and to that I added I tablespoon red wine vinegar some Italian seasoning, salt and pepper making a bacon grease vinaigrette for the romaine lettuce.

Baked some spuds in advance and whipped up some twice baked potatoes.

I then trimmed the lettuce and brushed with the vinaigrette


Once the potatoes were ready I threw down the lettuce and grilled for about 5 minutes turning regularly, until semi wilted and charred .

I chopped the lettuce and served





Enjoyed with a Grand Teton Brewing Co. 208 session ale

The chops are off the chain delicious and the grilled romaine hearts are absolutely fabulous , I highly recommend giving them a try

The stuffing sounds amazing, and I'm intrigued by the grilled romaine.  I'll have to give them both a try.

Great cook! I've grilled lettuce before but I really like the bacon fat vinaigrette you have concocted. I must try this! The chops are awesome and also a must try, thanks for sharing.

The smoked chops recipe came from someone over at smoking-meat forum. I'd like to add onion and mushroom next time but they are grubbing just like this.
