Slow n Sear overnight ribs

First I don't condone unattended grills, but the SnS has given new life to a rescued OTS that I've had just sitting around as a spare... Still warped bowl must leak a bit; I practically closed the intake & pinched the intake to approx 1/3rd open.

Fully started 10 KBB & dropped 3 Hickory chunks on top of the chimney of coals that filled the SnS.

Ribs were Thick & "Farm Raised" @ 6#

I trimmed some excess + membrane off & dusted w/ a cheap Blackened Seasoning that I enjoy



I left the flap on as a test pull & snack for later, I love how well it takes the Seasons.

Now these are approx grate level @ 3ish & 6ish hours in the night:




That was it for me I shut the intake completely & went back to bed.

Temp still 200 when I awoke & pulled flap right off to snack (testing)
then flipped but thought to take pic before I bent & pulled the smaller side away for breakfast...



I didn't want to portion off more ribs before Lunch, so added some water & thing held @ 200 easy until then.

Over 15 hours above 200 & still have coals + wood chunks remain for a future cook

Next up some twin butts...

Thanks, I'm sure glad had it too.
"Farm raised" ribs would've needed foil crutch or "stalled" on a regular cook.
These things are Dense (Extra Meaty) but got pliable (bend test success)
