Brown Out Ribs

With 100s of forest fires burning all over the west  we've been in  a smoke filled haze for over a month . Our recent camping trip to Glacier National Park  was cut short due to smoke and fire. It's as bad as gets out here .

So what do you do when everything is on fire and burning , have a BBQ of course ;)

My girls asked for ribs, that means the sweet candy variety for them .

  I trimmed up the ribs and rubbed them down with some sucklebusters and Weber Chicken and Rib Seasoning , wrapped and refrigerated over night .



A creature of habit I've used my WSM for ribs since I got it in 1997 , today I went out of my comfort zone and used the 22 MT with a HC internal ash pan. I used one basket full of fuel and a chunk of applewood. I couldn't get the MT to go below 250 so that's what I rolled with for about 3 hours of smoke .




Time for the ole Texas crutch , brown sugar , apple juice and honey , wrapped up for two more hours of cook time .
Threw on some Hatch chilis for a test smoke .


Sauced for the last hour , standard 3-2-1 ribs.

Those look so good.  A friend of ours in Texas did his that way.  I haven't had the honey/brown sugar ribs in years.  Well done!

Thanks my girls love them that way , I need more heat in mine , but these are certainly tasty when your in the mood :)

those are some of the best ribs I've ever seen come off a kettle.

Lose look delicious!! I might just have to take a rack or two out of the freezer and smoke some this weekend.
