Beef Short RibsThis was set up as 2x2, using Stubb’s and cherry wood. This snake burned @ 250 +/- a few, for 6.5 hours.
I have only done these once before and used a bit too much rub (S&P), but they were still very tasty! This time around I cut way back on the rub, so I could taste the flavor of the meat. Kosher salt, cracked black pepper and tiny bit of Weber Roasted Garlic and Herb
On they go.
With the top vent fully open and just one bottom vent fully open, the kettle settled in @ 250 for the entire cook. I had very clean smoke about 45 minutes after I lit it and that’s when I put the ribs on.
2.5 hours into the cook, I took a peek and a pic!
4.5 hours and they looked done to me. Probed with a toothpick with no resistance.
I really like this style of beef ribs. They were very moist and full of beefy flavor.
I had initially planned on using my Mini, but decided to get more practice smoking on this kettle. It is every bit as stable as my Mini and 18.5 WSM and just as good on fuel!
