I know I have posted similar cooks like this before, but Eastex had some questions about the paella pan size, so I thought this might be of help in showing the fit and how it works. This is a 17 inch pan.
A little wok oil, garlic, water chestnuts and peanuts getting some color.
Marinated chicken added.

Almost finished. You can work the food between the hot side and cool side with this pan. I actually let it sit banked on the cool side of the pan for a few moments with the lid on to cook the vegetables just a little more.
Done!
