Lamb Kofte on the Mangal

Fired up some ATK Lamb Kofte today on the Mangal.  It turned out really well.

I've learned from last time.  I used a super hot fire and cooked with the lid off.  What an improvement.  I did have some flare up from dripping fat, but the skewers are high enough the food was out of the direct flame, for the most part.


This was good, I recommend this recipe.

That recipe was really tasty and really easy. I recommend giving it a shot.

On the show, they cook it on a Performer. Interesting that they put holes in a drip dray and place the charcoal in that. I think they said to increase the intensity of the fire. I don't get the logic behind it. Will see if I can find the video tonight.

Amazon.de will ship to us. The $ is strong against the € right now.

They also have the Weber Pizza oven accessory.

Amazon.de had a better price than Amazon.fr, Amazon.it, Amazon.es, and Amazon.co.uk when I bought those. I'd expect the EU Amazons to all be priced the same.

This may be a silly question, do you have a food processor?  We tried the America's test kitchen recipe and we didn't have good results.   We tried to use a blender but I don't think we got the right consistency from it.  Our Koftes ended up falling apart on the grill.

Yes.  We have a food processor.

It seems a blender would work well. I think the important part may be the kneading (also the gelatin and grating of the onion and the refrigeration.). So long as the pine nut mixture is pretty smooth I would think you are good.

If you watch the video of this, they make a big deal of the grating (and draining) vs mincing of the onion, the gelatin, and kneading until it is sticky.  Also, the refrigeration.

I squeezed the onion out & a few other things, but it obviously wasn't quite enough !!!

Hadi's (BBCue-Z) already got me straightened out, but thanks for the additional info man !!!
