Trout/Salmon on the 26

Roasting beets, sweet potatoes, and a couple of spuds indirect. Beets and spuds were sprayed with OO. Sweet potatoes were sprayed with coconut oil. Rendered some bacon and roasted some Brussels sprouts in a CI skillet.


Salmon was coated with Pearl Street rub from Savory Spice. This is an awesome rub for salmon as it uses maple sugar. Trout was coated in Cherry Creek Seafood seasoning also from SS.  Thin cut lemon wedges were placed into the cavity, and the trout was wrapped in bacon. I used a few strings of butcher's twine to keep everything together.


CI skillet was preheated before trout was added. Salmon was cooked indirect on foil. Alder was used as smoke wood.


Trout was flipped to crisp up the bacon, but spent most of time indirect.


It was real tasty, and I just finished up before it started pouring last nite!

That looks beauty right there. If I did that for my SWMBO I'd be sittin' pretty boy!!! Thanks for the idea.

Yes - they roasted for approx 45 min or so at 375 lid temp.
