Great play by play there ATS, ribs look great! Scout is adorable too.
For my thermometer, I found I jcan ust scrape all the gunk off with a razor blade. Works a lot quicker then trying to clean it, takes about a second a looks brand new. The one I have I got from Walmart and has a glass face.
