Also, the cajun bandit stacker works VERY well for salmon.

Salmon and smoke go together so well. I'd really like to get my hands on some peach wood. Pecan has been my do everything go to lately. Also have some hickory and mesquite that I like but they are a little heavier and don't have as broad of uses.

Kept the temp low, for a couple hours maybe? I haven't smoked fish yet.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

This was a 40ish minute smoke. Temps started around 290 i think and finished around 450
It was the 3rd cook on 2 baskets worth of coshell (without adding any fresh)
I used the gas assist for 7 minutes, let it sit for 5 minutes, then put the stacker on with the fish.
I guess gas is more convenient :P

It was really nice!
my wife and I both flip our shit when salmon gets overcooked.
It flaked apart perfectly, while still being a nice medium rare. the stacker is a salmon cooking machine!

Agree with overlooking salmon, the thermapen has been my saving grace lately with salmon. I usually go hot and fast, but yours looks great!
