I got 2 -7 bone Chuck roasts about 4 pounds each , I injected them with a Lipton beefy onion soup mix that I cooked and gave them a dry rub of salt and pepper and old bay garlic herb I used a small snake with hickory chunk and apple chips and smoked the roasts at around 225 for a couple hours until they hit  160 degrees . I then panned and foiled the roasts , one in a bed of peppers, onions and jalapeņos with more garlic and stout beer , the other I added beef broth to.. I cooked the roasts up to about 202 degrees and then placed in a cooler for about and hour to rest . It was butta , The meat had a great smoke ring and had outstanding flavor . I served the meat on a crusty toasted roll . The appetizers were small sweet peppers with sausage or skirt steak, cornbread stuffing and parmesan cheese .

Nice! Yeah, that is a pretty nice smoke ring you got there... a buddy of mine just texted me that he is smoking 2 chucks today, too... must be a sale going on. How did the beer roast turn out? Was it that much different than the other?

  I used Guinness stout and it along with peppers and onions made for a great flavor profile .

The other was a kid friendly version and I'd say more like brisket then say a pot roast :)

Helped my neighbor do two Chuck roasts , his hit a stall at about 147 degrees and it lasted over two hours . I didn't experience stall with my cook but it's something to keep in mind if you choose to cook one .
