Grilled Pina Colada

I grilled some teriyaki chicken, broccoli and carrots tonight, but afterword the pineapple came out, which was really the hit.



I topped them with a home made coconut creme sauce (there might have been a splash of rum in it) and sprinkled with graham cracker and cinnamon. Garnished with fresh mint and it was like a grilled pina colada.







It was ... Good.

That's a nice twist.....just straight or with cinnamon is good, but that looks extra !!!

Two ingredients:  Coconot Milk & Sweetened Condensed Milk. (With a splash of white rum for the adult portion.  A small splash is all that is needed.)

Deeply pre chill the milk and creme as well as bowl and whisk.  Beat together in kitchenaid on high until thickened to a foam or soft creme.  It will not achieve full stiff cream because of the high sugar and relatively low fat content.  Literally two ingredients and two minutes of mixing. 

I add the cinamon and mint as garnish because that is how Pina Coladas are served at my favorite restaurant in Mexico.  Rub that fresh mint through the creme sauce and it takes it to another level.

(I added pulverized Graham Cracker to this topping to give it a 'deconstructed pie' vibe.  It was great, but next time I will just omit and go with the deconstructed pina collada vibe.)
