Caribbean Corned Beef

So it was time for me to finally do a corned beef. My mother does one every year (we are going there this Saturday for hers) but I wanted to try smoking one here at home. Used pecan and apple wood. Employed the Cado (there's your Caribbean part) and the CB stacker.













Thought I'd give this flavor a try... not bad



Hour and a half in... Internal at 155, time to foil and put back on for another hour..





while it was resting I did up some broccoli (cabbage will be this weekend)







Some green lemonade

Last week burgers were the hot item, now this week it seems Corned Beef is the Q of choice! The whole cook looks great from the green cooker and beer all the way to the great looking plated shot. Was it as moist and tender as it looks? Nice job!

Great job, those slices look fantastic! I love pecan/apple mix, that is usually my go to wood for ribs.
