Since im going to be off my kettles for a few days I thought I'd share what my good friend out in BC has on his today.

Free Image Hosting brined for two days in apple juice, sea salt, anise seed, blueberry honey and smoked paprika  Skin on bone in.

Free Image Hosting 2 hours in. Apple juice, peppercorns cinnamon sticks bay leaves and some brine in the water pan. Cherry chunks and some fresh bay leaves scattered over the snake.

Will update as he does. what a monster hunk of beast.

Ive been assured that there is no burnt or bitter taste to the skin that the variety of cherry used just gives off that color. to me it looks like asphalt but the bark was a hit. 18 lbs of super moist delicious meat off the 22.5 lb leg. Glad to know my friends are eating well tonight.

Your friend has good taste.

The leg.

He's your friend (but I guess that's a given).

And he's a Packers fan.    ;D

Dude, relax your chicken.

What a great cook. I wonder if the skin came out crispy.

Is this cut also known as a "picnic" roast? If so...I have never cooked one, but my local Kroger had them on sale recently....I was tempted, but didnt pull the trigger. Looks like a good cook though.

@aguyindallas   Like a butt, the picnic is from the shoulder.  A picnic is from the thinner triangle shaped end of the shoulder.  A butt is from the thicker end of the shoulder.  A picnic is best sliced while the butt shredded.  I've done many a picnic on offset smokers.  They are awesome.  You will love it.
