Valentines Day Dinner - Dry Aged Rib Steaks

The wife wanted steak so that is what she got. We had the 18 yr old here for dinner so she got a top sirloin.

The fella I get these from sells a whack of product to restaurants. He ages his beef 28 days....notice how the beef sitting as it is forms a heart shape.....not sure if the wife was impressed or just humoring me when I pointed it out:



It got kind of windy and some snow got on the lens:

Nothing says lovin' like a dry aged steak on a weber in sub 0 temperatures.

I elected to take the little lady out to a restaurant....with the kids after my son's soccer game  ah life with children.

BTW, I am a huge samich fan and Reuben is tops on my list, I had a something called a sweet and spicy Reuben with pastami, smoked gouda and a sweet and spicy slaw.  Man o' man it was amazing.

Those dry aged steaks sure look good. I'v been experimenting with wet aging at home but it just does not seem as good as dry aged.
