Cooked a small rolled Boston pork butt today and turned out great.
Just on,
had a can of beer in pan

Meat at 160

Covered and continued cooking until meat reach 203

Its butcher twine they always have them  in the store, this one was 3 lb  sometimes they have them bigger but this was just right, because its just my son and me.

Did you take it off at 160 or was that just when the pic was taken?
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

Took the picture when it was 160 then I put in pan and covered it with foil and left on grill until it was 203

Really didn't keep track of time since I had a maverick probe in it and kept it in there when I covered it in foil, I had to leave for about 1 hr. and when I got back temp had dropped so that affected the time had to bring temp back up, but for time I would say 4-5 hrs
